Ingredients (serves 4)

  • 70g (1/4 cup) wholegrain mustard
  • 3 tsp honey
  • 2 thin & crispy pizza bases, without sauce
  • 200g shaved cooked chicken
  • 100g brie cheese, thinly sliced
  • 1 table spoon of sesame seeds
  • 80g baby spinach leaves, washed, dried

Procedure:

  1. Preheat oven to 220°C. 
  2. In a small bowl mix mustard and honey
  3. spread the mixture over the pizza bases.
  4. Divide the chicken, brie and sesame seeds between the pizza bases.
  5. Cook until the bases are golden and crisp, and the cheese is melted. 
  6. Serve topped with the spinach leaves.

Ingredients
  •  3 cups of apples (cored and chopped)
  • 1 cup of raspberries
  • 2 tablespoons of frozen orange juice (concentrate)
  • 2 tablespoons of honey
  • 1 teaspoon of cinnamon
  • 1 teaspoon of lemon juice (fresh)


Procedure:
  1. Preheat the oven up to 140º F 
  2. Blend 1 cup of apples, the raspberries and the orange juice concentrate until smooth, using a blender. Add remaining apples and blend until smooth. In a medium sized bowl pour apple mixture then stir in the honey, cinnamon and lemon juice.
  3. Line a baking sheet with plastic wrap and tape to edges.
  4. Pour apple mixture on the plastic lined baking sheet and spread with a rubber spatula until it's 1/8 inch thick. Leave about 1/2 inch of space open from edge of pan to allow fruit to expand while drying.
  5. Bake in oven for 4-6 hours. Fruit leather is done when it is no longer sticky to the touch. When done, roll the fruit with the plastic wrap the long way. Cut into 2-inch pieces. Store pieces in an airtight container.

4. Sprinkle the 3 table spoons of flour on the flour surface. Flour your hands well and move dough from bowl to surface. Knead the dough by using of your hand to push to push the dough away from you. Pull the dough back towards you with your hands folding over you as you pull it. Repeat it for about one minute.

5. Place the kneaded dough on a dry pizza pan. Pat the dough into an 8 circle. With a pizza cutter cut the dough in to eight equal wedges.

6. place the pan in to a pre heated 425º oven and bake for until golden brown it will take almost 15-20 minutes.

Ingredients you will need:

  • 1 cup sugar
  • 1/2 cup cornstarch
  • 1/2 teaspoon salt
  • 4 Cups milk
  • 6 Egg yolks, slightly beaten
  • 2 Tablespoons butter
  • 2 Teaspoon vanilla bean paste
  • 2 Baked 9-inch pie pastry shells or you can make and substitute graham cracker crusts if you like
  • 10 ripe but firm bananas
  • 2 Cups of Sweetened whipped cream
  • Sprig of Mint for final garnish if you prefer but is not necessary

Preparing you Banana Cream Pie:

First you will combine all of the milk, and the sugar, vanilla bean paste, cornstarch, and salt on top of a double boiler. A double boiler is a pot filled with water that is directly over the heat, with another pan without any water on top of the pan over the heat. This is a design created long ago to help you from burning delicate sauces, or cream fillings for pies etc., so you will not burn them. You will whisk this sugar, milk and starch mixture vigorously to get the sugar melted, and also to make sure that you do not burn the milk. You will cook over the double boiler until the mixture is well thickened, while you have stirred constantly, making sure there are not starch globs in the mixture. You should have to stir for about 10-20 minutes, or until it is thickened to a very thick like oatmeal consistency. You will then add a small amount of the beaten egg yolks to the hot milk mixture into the while stirring constantly. You will do this in small amounts, until all of the eggs are incorporated. You will then add back over the double boiler and cook for 2-3 minutes longer. You will remove the creamy mixture from heat, and add the butter and mix into the filling and then let cool thoroughly.

While the mixture is cooling I would bake the pie shells according to the instructions on the package. I would cook until done and let them cool totally, as you do not want to create a soggy bottom pie. You will then add to the bottom of the cooked and then cooled pie shells with about ½ of the amount of cooled filling in each pie shell. You will then peel eight of the bananas, and slice them into the pie shell. You will then cover the cut bananas with the remaining pie filling. For garnish you will cut on a bias or slanted angle pieces for the two remaining bananas. You will add most of the remaining pieces around the edges, and then you will whip some heavy cream with some sugar to stiff peaks. If you do not want to go through the trouble of whipping heavy cream you can use miracle whip or your local brand. In the center of the pie you will add the whipped cream, and then some of the bananas on the top in a flower pattern, or something creative. Add the sprig of mint to the top of the dessert and voila, Banana Cream Pie. This is a really easy recipe, and it is a good tasting recipe. I hope that you enjoy it.

Ingredients you will need:

  • 1 Can of coconut milk (or) 16 ounces
  • 1/4 Teaspoon of fresh ginger
  • 1/2 Cup of shredded coconut
  • 1/8 Teaspoon of nutmeg
  • 1/4 Cup of sugar - you can go much less on the sugar if you like. Adjust it to you taste. If you want to totally remove it that is an option too. You can use a sugar substitute, but follow the directions on the box.
  • 2 Cups of rock salt
  • 4-5 Cups of cubed or crushed ice.
  • 4 small ramekins
  • 2 Large zip lock bags
  • 1 mixing bowl

We had to select out of a hat, the items we were to prepare, and do so in a slotted time period to be graded. We knew that we had to make a dessert, and were allowed to bring any items into class that we wanted to use within reason. I decided to bring in rock salt, coconut milk, and shredded coconut. We always had fresh ginger, nutmeg and sugar at our disposal, so I knew that I would have that at my disposal for any dish. I very much believe that my instructors loved my coconut dessert dish, due to they ate every last bite, and I made a perfect score.

This is a great recipe, and it is very fun to make, and probably the easiest to make, too. I am glad that I am able to share this recipe with you!

You are now ready to make your ice cream.

Preparation:

You will add in a mixing bowl the 16 ounces of coconut milk. It is always best to shake the can of coconut milk before you open it, to get the built up coconut milk fat solids incorporated back into the liquid. You will ten cut off a piece of ginger and peel it, and then cut it, and make a paste, and add it to the milk. Add you nutmeg, and sugar, and give it a good mix. You will need to taste it to make sure it has the flavor component you want. If you want to add more nutmeg or ginger now would be the time to do so.

If you are a diabetic you could use a sugar substitute or no sugar at all. I have not tried it without the sugar, so I would be interested in any feedback on this matter. I do believe that it would work though.

You will now need to get ready for the fun to start. You can roast of your coconut before or after. Just get a small souse pan, and add your coconut to a pan over med to med high heat and toss until golden brown. Remove from pan and save for topping your finished ice cream later.

Add your milk ice cream mixture to the first zip lock bag and make sure it is sealed very well. If you have a rubber band to go around keeping it from flapping around this is a good thing. In your second bag you are going to add half of the rock salt, and half of the ice to the bag. Next ad your 1st zip lock bag with the milk mixture, and then the rest of the ice, and rock salt. You will then let the kids take over if they are helping you out.

This is best done outside in an area that is not going to matter if things get a little out of hand. You will need to shake vigorously for around 5-10 minutes, or until the milk starts turning into a frozen solid. You will then remove from the bag of ice, and rock salt. Mix very gently with cold water, and pat dry. Immediately put the semi-frozen mixture into the ramekins, and put into the freezer for about 5-10 minutes. Pull from freezer and add your roasted coconut to the top and dig in.

I love this recipe, and it is so fun to make. It is also one of the best desserts I have ever eaten as well.

  3. Do not rinse your pasta, and return the pasta to the pan.
  4. While pasta cooks, place your canola, or olive oil, sun dried tomatoes, fresh basil, walnuts, parmesan cheese, garlic in a food processor; process until finely chopped.

    Directions:

    Preheat oven to 350 degrees. Lightly spray a 9 inch spring form pan with cooking spray. You will mix your graham crackers and margarine, or butter. Mix until incorporated. You will then want to add your graham cracker crumb mixture very evenly over bottom or your spring pan. In a large stainless steel mixing bowl you will mix together the fat free cream cheese, sugar or sugar substitute, and vanilla bean paste. I will start out on a low speed, until blended. I will then increase the speed and whip the mixture until it is very creamy, and smooth. After the first set if ingredients are incorporated, I will add my key lime juice and continue to mix thoroughly. Then you will add the milk, and finish mixing all items together until it is very smooth in texture. If your mixture is too runny, you may want to add more cream cheese.

    You can use a food processor if you like, if you do not have a hand held mixer. I prefer a hand held because it is easier on the clean-up.

    Ready to bake off your Key Lime Cheesecake: After you have your spring pan ready, and your filling made it is time to put them together. You will need to get a spatula to scrape the bowl after you pour the creamy filling into prepared pan. You will scrape any extra filling into the pan, unless you want to sample your filling. This is not a bad idea. You can adjust for any flavorings you would like to add at this time. Some prefer a sweeter taste, or maybe more vanilla or Key lime juice. So, you can add at this time to suit your needs.

    You will then need to add your cheesecake filling into the spring pan. After the filling is in the spring pan you will transfer the spring pan, to larger pan and add a water bath. The water will need to be about 1-2 inches up the side of the spring pan to prevent burning. You will need to check after about 30 minutes, and bake until center puffs and is almost set. Remove from oven, and the water bath. If you have a cooling rack let cool until cool to the touch, and then put into the refrigerator and chill completely. You can add fruit to your dish if you like for garnish. It makes a beautiful presentation if you decide to do so. I hope that you enjoy this dessert recipe.
