Ingredients:

  • 2 cups cooked penne pasta
  • Three-quarters cup canned chick peas (rinsed and drained)
  • One-half cup cherry or grape tomatoes (halved)
  • 2 cups baby spinach
  • One-quarter cup red radishes (halved and thinly sliced)
  • Juice of one lemon
  • 4 tablespoons olive oil.

Directions: Cook pasta according to package directions, drain and place in a bowl with the remainder of the salad ingredients, tossing well to combine. Adjust the lemon juice and/or olive oil, if needed, to taste and season pasta salad with salt and pepper to taste. For a little extra boost of flavor try adding some cubes of sharp cheddar cheese or pitted and chopped oil-cured olives. Serving

Idea: Serve this quick pasta salad in colorful bowls with a side of cheese breadsticks and a small serving of artichoke hearts sprinkled with grated Parmesan cheese and fresh ground black pepper. Makes 2-3 serving

Description: Here is a great recipe that is so simple to make. You will find that most of the ingredients are relatively inexpensive as well. Happy Eating!
Recipe:

Search labels: chicken, white wine, pasta.

3 Tbsp. Olive Oil


1/2 C. Chopped Onions


4 Tbsp. Chopped Garlic


Sautee all of the above until onions start to turn a bit brown.
Add all of the following...


1/2 C. White Wine


Let simmer on medium heat for about 5 mins.
Add all of the following...


White Wine into a wine glass, and enjoy for yourself!
Add one of the following...


1 C. canned red sauce


1 can stewed tomatoes


1 can chopped tomatoes


4 chopped fresh tomatoes


Let simmer for about 5 mins.
Add one of the following...


4 chicken quarters


4 chicken breasts
Add all of the following...


4 sprigs of Fresh rosemary (I leave them whole and remove once dish is completed)


Salt & Pepper to taste
Pleace in 400 degree oven & cook until chicken reaches an internal temp. of 180 degrees.
Add all of the following...


At this point, you should be ready for your second glass of wine! Enjoy!
Serve over a bed of pasta.


Garnish with parm.
Tips from Chef Bek:
* Wheat pasta can be substituted for white.
* Dried Rosemary can be substituted for fresh. (when using fresh herbs in a recipe, use 3 times as much as you would use of a dried herb)
* Chicken broth can be substituted for the white wine.
* Cooking spray can be substituted for the oil you sauté your vegetables with.
* Fish can be substituted for chicken.

Chicken is a meat available to all, it is not overly expensive, a great source of protein, fills you up and makes you feel good! BBQ chicken does not have to be grilled or smoked it can be cooked in the oven too. The trick is knowing what items go into a good recipe so that you and your family enjoy the result.

For the regular BBQ chicken there are a lot of different recipes and many different ingredients but usually if you see the following then you are on to a good one. Cumin, worcestershire sauce, mustard, garlic, ketchup, sugar, cinnamon, even sometimes beer. For chicken that has an Asian flavored sauce you want a recipe that has items like soy or hoisin sauce, ginger and honey. Remember everyone has their own tastes and preferences which is why there are so many different variations out there. A great base recipe to start with is one from a show called Paula's Home Cooking with Paula Deen where she makes a dish called Deens Brothers BBQ Chicken. It is one that anyone can follow and tastes great as is, or you can play with it.

Ingredients:

  • One whole chicken cut into 8 portions (chicken weight about three and a half pounds)
  • Orange juice - 2 tablespoons
  • Ketchup - 1 cup, liquid smoke - 1/4 teaspoon
  • Dark brown sugar - 1/4 cup (packed)
  • Dry mustard powder - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Worcestershire sauce - 1 teaspoon

Preparation:

Prepare the oven by preheating to 375F or the grill by using olive oil and brushing it with it. Place in a bowl all of the sauce ingredients (all of them apart from the chicken). Mix well so that they are all combined and then scoop out a third of a cup for basting. Take the chicken pieces and put them in the sauce and toss carefully until they are well coated. Cover the chicken pieces and put on the grill or place them in a roasting pan. Cook for a total of forty to forty five minutes (make sure they are cooked all the way through). After 20 minutes has passed of cooking time baste them with the remainder of the sauce you had set aside.

The great thing about this recipe is that as well as tasting good it is easy! Liquid smoke may pose a problem for some of us more inexperienced grilles, but it is just to give the chicken a Smokey flavor without going through a long difficult procedure of smoking the meat. It doesn't have to be used if you prefer not to.

Although chicken is not an expensive meat, especially when you buy one whole, some people prefer not to have to cut up a whole chicken themselves. Therefore, thighs are a great alternative, as they are cost effective taste good and cook in less time. This means you and your guests get to eat them quicker! Or look for a mixture of chicken parts, there are legs, wings and breasts too.

I can't help but love that quote. When I was a kid, my grandpa always called any store bought cookies that somehow made it into the house "Commie cookies." For him, it was Grandma's homemade cookies or none at all.

There's just something special about homemade cookies, especially chocolate chip cookies, so far as I'm concerned. It's a great family activity, something even children can help with, and everyone loves eating the results.
Here's an easy recipe for chocolate chip cookies I think you'll enjoy:

Chocolate Chip Cookies
  • 1 package butter pecan, chocolate chip, chocolate fudge, devil's food, German, chocolate or yellow cake mix
  • 1/2 cup butter or margarine -- softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup chopped nuts
  • 1 (6 ounce) package semisweet chocolate chips (1 cup)
Heat oven to 350°. Combine half of the dry cake mix , butter, vanilla and eggs in large bowl and mix until smooth. Stir in remaining cake mix, nuts and chocolate chips.

Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until edges are set (centers will be soft). Cool 1 minute; remove from cookie sheet to wire rack.

  • 320g fresh egg pasta Taleteller

  • 1 onion
  • 1 carrot
  • 1 stalk celery

Preparation

Fry over low heat the onion, carrot, celery with butter and extra virgin olive oil; then add the minced meat, salt and pepper and brown everything for a few minutes. Next, chop and add the tomatoes.
Cover and simmer for 3 hours; once the Bolognese sauce is ready, boil the Tagliatelle in salted water, drain and season with the Bolognese sauce, sprinkle the dish with Grana Padano cheese and serve.

The options regarding the type of meat to use depends on personal preference. The use of veal gives the Bolognese sauce a more delicate taste; if you want a more intense flavor you should add chopped ham or bacon; or you can add chicken livers into the sauce to make it more tasty.
